Koubi trained at the Rosella Hightower International Dance Center in Cannes. He then went to the Marseille Opera, where he worked with Jean-Charles Gil, Jean-Christopher Pare, Emilio Calcagno and Barbara Sarreau, as part of the Affluents du Ballet Prejlocaj. He then became a member of the Center choreagraphie national de Nantes before working with Karine Saporta and Barbara Sarreau.

Koubi has also collaborated with the writer Chantal Thomas and Romain Panassie.  He also works with videographers for film productions of his choreographies, such as Pierre Magnol, for Bodyconcrete. He was made a Knight of the Order of the Arts and Letters in 2015 by Brigitte Lefevre.
